Mexican Independence Day Dip

1--Mexican flagToday, September 16th, is Mexican Independence Day, marking the independence from Spain declared in 18 and recognized on September 27, 1821. It is nicknamed “El Grito” or the shout for independence.  The green-white-red tricolor flag was first seen in 1821 and was know as the “Sierra,” but it was not officially adopted by Mexico until April 14th, 1823.  And the meaning of the colors? Green is for hope and victory; white is for the purity of ideals, and red is for the blood shed by the Mexican national heroes.  The “Cry of Dolores” is performed by the Mexican President at midnight of September 15th and Mexican citizens celebrate and party the night away with swigs of tequila, shots of tomato and orange flavored sangrita and, of course, margaritas. Then in the morning they revive themselves with a large steaming bowl of menudo served with tortillas, onions and cilantro.  Menudo supposedly has many medicinal properties, and relieving hangovers is one of them.

But here at MexGrocer, how do we celebrate?  With Mexican Flag Dip, of course!

Mexican Flag Dip

1 cup guacamole
1 cup fat-free sour cream
1 cup salsa
Rosemary sprigs
Black beans
Chips for dipping

Divide a rectangular pan into thirds. Spread the guacamole and sour cream, adding salsa on outer band last to avoid it running into the other dips.  Top the center with an “eagle” of olives beans and sprigs of rosemary.

Yield: 8 servings
Heat Scale: Mild
